Rinse the rice with cold water until it becomes transparent. Put it in a bowl, cover with cold water and leave for 10-15 minutes. 2. Put the rice in a saucepan and cover with water so that it covers about 1 cm. Bring to a boil, reduce heat to low, cover and cook until tender. Then remove from heat, let stand for 5-7 minutes. 3. Put the rice in a wide bowl and cool as soon as possible, stirring occasionally and blowing it over (for example, using a fan). 4. Mix rice vinegar with sugar and salt until they are completely dissolved. Pour vinegar into rice and stir to distribute evenly. To prepare sushi and rolls, you need to use warm, but not hot rice.
